Description: This beer draws inspiration from plants surrounding our homes in Highland Park. The new version of Yard Beer uses paddle cactus (prickly pear cactus) and black limes. The paddle cactus come from Bob’s neighbors Mel and Steffen’s yard. The black limes come from our friend Alex Brown’s yard. He takes fresh limes and brines them and then ferments them in the sun which turns them black and intensifies the flavor. We came up with a fairly simple saison recipe for the beer that leans toward citrus and zesty pepper. We then conditioned it for a short period with our house mixed culture (Brettanomyces, lactobacillus, and pediococcus) which adds a bit of earthiness to the brightness of the lime citrus and chlorphyle quality of the cactus. This should be a fun one! 5.3%
