Description: The base is a classic NE IPA grist, with a large percentage of malted and flaked oats. We went big on an 80c whirlpool with a combination of Citra Incognito, Citra Cryo pellets and Idaho 7 T90 pellets to maximise the amount of tropical fruit flavours, a hop bill designed to survive the vigour of a 38c fermentation with the Norwegian Voss Kveik yeast strain. Kveik is a truly unique yeast that enjoys high temperatures, fermenting at a rapid pace. It delivers a clean flavour and highly desirable orange juice-like ester profile perfectly suited to an IPA. Post-fermentation, we went with a 28g/l dry hop made up of Citra BBC alongside Mosaic and Idaho 7 T90s, resulting in a TIPA dripping in a fruit bowl of ripe, tropical flavours that finishes zesty and smooth.
