Beers like this are getting increasingly hard to find—good wort fermented with a single strain of eccentric yeast of Belgian origin, cellared patiently, and bottle conditioned to a nice spritz...a very simple beer made with care, attention to detail, and patience. Sensory notes are as follows: Sensible amounts of classic Belgian spice, wholly appealing tart profile, earthy, lemony, a healthy dose of bergamot/earl gray—a little custard too. Please do not cellar.
