Description: We designed the recipe for this beer specifically for the rum casks, using a restrained roasted malt character to emphasize the sweetness imparted by the rum, along with a heavy addition of various crystal malts to layer even more caramel sweetness. After aging in Jamaican rum barrels for nearly 17 months, we conditioned the finished beer on ripe bananas brûléed with raw cane sugar, along with cinnamon and Madagascar vanilla beans. The resulting beer perfectly replicates bananas foster, the classic New Orleans dessert.
